Date & Pistachio Bites

We at Om Reset® love this Date & Pistachio Bites recipe by Julie Bernier. It is super easy and a perfect sweet treat.

Most energy balls require nut butter to bring the dough together, which is heavier for digestion.  Here we make the dough soft by heating dates on the stove with ghee…yum.  They also make great travel snacks.

Date and Pistachio Balls

 
  • 2 teaspoons ghee
  • 1 cup soft dates (like Medjool), pitted
  • 1/4 cup + 2 Tablespoons pistachios, roughly chopped
  • 2 Tbsp shredded coconut
  • 1/4 teaspoon ground cardamom

Garnish

  • 1 Tbsp coconut
  • 1 Tbsp pistachios
  1. Heat a pan over medium-low heat.  Add the ghee to warm, then add the dates.  Stir and mash around for a few minutes until soft.  They should become a thick paste in consistency.Add the roughly chopped pistachios and dried coconut and mix to combine.Roll the mixture into 1″ balls.Grind the extra coconut and pistachios into powders separately.  Roll some balls into the coconut and some into the pistachios.Store in the fridge.
